You will reach the ??? level when you're doing a trick that is too long and too hard for the computer to figure out, cause the tricks can't go forever. You can reach the ??? level with all spins and flips.

The best places to find a big jump and perform the ??? is jumps with a "Trick Boost" figure. But of course you can do it on many tracks, like Much 2 Much for example.
