Oh man, Kivvi, so much nostalgia... I love the Jak games.
I can't say any one game is my all-time favorite, but the series that have really stuck with me over time are SSX, Tekken, and Dance Dance Revolution. I can't think of any other games that are quite as timeless.
Honestly whenever somebody asks me that the first game that jumps to mind is SSX 3. It's probably one of the most creative, deep, and well designed games I've ever played. Even now I'm sure I could go and dump a few hours into it (if only it worked on my ps3...)
Close seconds: Prince of Persia: The Sands of Time Jet Set Radio Future Kingdom Hearts II Shadow of the Colossus
I also don't have any favorite but I like Super Smash Bros. (every one), Phyconauts, Burnout revenge, Zelda (haven't played the new ones) Need for Speed (every one), Sly cooper, Okami and OMG KINGDOM HEARTS and HALO. (In no particular order). But personally I think Okami beats Zelda

Mortal Kombat will ALWAYS and FOREVER be my All-Time Favorite Video Game!!!
I had them all(Except the new one. Didn't have a console at the time, but I did play it.) From MK1 to MK Armaggedon. I don't count MK vs. DC. Crossover game.
A close second would be the Burnout Series. I LOVE BURNOUT!
And of course the SSX Series is a VERY close second.
Super Mario Sunshine (GCN) Zelda: Wind Waker (GCN) SSX Tricky (GCN) Donkey Kong 64 (multiplayer) (N64) Pokemon Snap (N64) GTA: Vice City (PC) Rayman 3: Hoodlum Havoc (GCN) Sonic 3D (PC) Lotus Turbo Challenge (Amiga) Road Rash II (PC) Ground Control (PC) Warcraft 3 (PC) Freelancer (PC) Halo (co-op campaign) (Xbox)
Maybe it's just me, but today's games don't give me that gamer addiction feeling I used to have with the older titles. But I gotta say it came back for a little while the first time I played Phantasy Star Online 3 on Xbox Live. Walking through a new universe with new friends is amazing. That's why I put all my money on SSX.
*Btw. Rayman 3 HD will be released for Xbox Live Arcade and PlayStation Network on March 21, 2012.
*added a few more.

I love the Genesis Sonic the Hedgehog games, as well as the Streets of Rage games. Even though I have TONS of games I love, I'm going to go with those two series because I grew up with them.
Gosh, where do I start? Most of the ones I like are taken...the Old School Sonic games were a fraction of my childhood and I was happy that I know how lucky I was to have had a Sega Genesis, Super Mario 64 was a game I wanted to play all day when i was young. I have beaten the DS version of it (it was enjoyable). But one of the funnest games I played would be Jak and Daxter. That was pretty much my childhood, along with SSX. Loved how Dax was always obnoxious, which fit perfectly into the game. Everyday that I got off school to play my PS2, that was the game I would automatically jump to. Another one of those games was Pokemon, Red/Fire Red (Advance). I played the heck a lot outta' that game. I played that game for weeks until I beaten it. I just might play it again soon...
As of today's modern games, I still wish I had Uncharted 3, or even the whole series. That series overall is outstanding, and puts storytelling and gameplay into a whole new level. I love the characters and the relationship each of them have, liek Drake and Elena . My favorite sequence in the series was the second and third chapter of U3, how Drake and Sully actually met. I won't go further to explain, but it's really awesome.
Sheesh, thats a hard one and i'm going to have to cheat and do this by console: Atari ST: Joust Mega Drive: Desert Strike PS1: Coolboarders 2 PS2: Hitman Contracts PS3: Red Dead Redemption (perhaps to be replaced by SSX?)
Disregard my last post, I'd actually say my favorite game would be Garry's Mod, since you can really do a lot of stuff there, with all the fan-made mods (looking at you, Prop Hunt) and the endless stream of user-made content, whether it be weapons, entities or just fan-made movies.
